How Steph shared the love this month…

Love month at NEWGROUP was all about sharing the love, and what better way to do this than through the act of sharing a delicious sweet with the office. I named this cake a ‘Chocolate and Coconut Love Cake’, just in time for Valentines Day. The cake is gluten free and the original recipe includes ingredients from our much loved clients Nui Coconut. Using ingredients such as coconut oil instead of butter not only tastes great but makes eating this treat not nearly as naughty! It was a huge hit with everyone here at NEWGROUP and I think we will be sharing the love in this way for the rest of the year!

Ingredients:

100g Dark Chocolate

100g Dark Coconut Chocolate

3 tablespoons Nui Coconut Wild Harvest Virgin Coconut Oil

5 eggs, separated

2 1/2 cups almond meal

3 tablespoons Nui Coconut Raw Cacao Powder

Now get cooking:

  1. Preheat oven to 180°C/160°C fan-forced. Prepare your chosen tin with baking paper.
  2. Put coconut oil, chopped chocolate and raw cacao powder into a saucepan and cook over a low heat. Keep stirring until melted and combined. Leave to cool.
  3. Using an electric mixer, beat egg yolks together. Beat egg whites separately until soft peaks are formed.
  4. Add egg yolk mixture to chocolate mixture followed by almond meal and stir. Fold the egg whites into chocolate mixture gradually. Pour into pan.
  5. Bake for 40 to 45 minutes or desired texture is achieved. Ice as desired, let your creativity run wild!

What Peter is loving this month…

New Year’s resolutions are hard to keep, most people (read: me) have usually forgotten by February, but I’ve been keeping on track with my new favourite toy: my Fitbit fitness tracker. The Fitbit counts steps, what you eat, drink and helps you set goals for you.

I love all things tech, but so far I’ve been reluctant to embrace the new wave of wearables hailed as the next big thing in the tech world. The Fitbit is as non-invasive as possible, being a watch like device that just sits on your wrist with a dark strap. I’ve been wearing it for about 2-3 months now and I have to say, I’m really loving it. The problem I’ve had with fitness is consistency, I’ve never been consistent with it, but seeing how I don’t have to turn anything on or push any buttons with the Fitbit, I’ve been unintentionally tracking my steps. To me, that’s a plus and I think for a lot of other, if they’re buying apps or devices and then forgetting all about it a few days or weeks later, this might be the answer they’ve been searching for, for me at least, that’s been the case.

I’m really enjoying it, so I would definitely recommend it and thought I would make it my shared product for the month of February.

Ramesh’s top pick for this month…

For February, I thought I would share a thrilling film I recently saw in the cinema: Captain Phillips. It’s based on a true story about an American ship that’s been hijacked by Somalian pirates in the 1980’s. I absolutely loved this movie and especially the fact that one of the pirates was portrayed by a first time actor who is now being nominated for an Academy award for Best Supporting Actor. The story and visuals were equally impressive but the acting was the real winner, I really believed and for a moment, I could taste that salty water, smell the sweat and feel the fear. It’s been a while since I saw such an effective film – it’s a definite watch for this month but maybe skip it for Valentine’s Day unless you’re both into action thrillers on the high seas!
